Buttermilk Berry Soup

You can wonderfully enjoy buttermilk by making it into a refreshing chilled soup flavored with blueberry and garnished with a slice of orange or strawberry. During hot summer days you can serve this as an appetizer. For a fun casual dinner party it makes an interesting dish. Especially in contrast to the strawberry or orange garnish the blueberry soup also makes an elegant presentation. The nutritious and delicious berry buttermilk soup will delight and impress your guests.
You need fresh blueberries, sugar, water, orange zest, orange juice, and buttermilk to make thisrecipe. You can use fresh strawberries or sweet orange slices for garnish. This tangy, sweet, zesty and creamy soup brightens the palate and stimulates the senses and a great way to start a long and beautiful dinner or memorable lunch. When blueberries are in season this dish is ideal and they are at their sweetest and most affordable. However, if fresh blueberries are not available, you can also make this recipe with frozen berries. Before cooking with the other ingredients thaw the frozen berries in the refrigerator for a few hours. You don’t need to peel, core or seed blueberries before cooking.
Sort the blueberries out and discard any crushed, deformed, moldy, shriveled or soft fruits before using fresh blueberries for cooking. Remove and discard remaining stems on the berries if there are any. Place the sorted blueberries in a colander. Then dip in a bowl of cold water to rinse gently. Swish the colander in the water and drain. In a clean surface spread the berries out and gently pat dry with a paper towel. After doing this, you can now use the berries for cooking.
250gms blueberries
1 1/2 cups water
80gms sugar
1/2 teaspoon orange zest – finely shredded
2 tablespoons orange juice
300ml buttermilk
1. Mix berries, water, sugar, orange peel, and juice in a large saucepan. Mix well. Then allow it to boil.
2. Simmer it. Let it cook for 20-25 minutes.
3. Turn off the gas. Then let it cool.
4. Blend this mixture until you get a smooth paste. Later add buttermilk. Let it chill before serving.
5. Serve the soup with a slice of orange or strawberry.
